Apple , Cinnamon and Walnut cake …

…1st of December is a date I always look forward to , for many reasons . First of all it is my birthday and although I am not particularly bothered about getting older (44 today) , my 10 year old son deemed it necessary to make me feel better by saying that according to him you are not considered old until you hit 50 .Good to know !😂
Today also means the beginning of a month of Christmas celebrations .
I love the leading up to Christmas Day more that the day itself to be completely honest . The house puts its best ‘clothes’ on and there is always a yummy treat around to be had , whether that is a piece of chocolate from the advent calendar or Christmassy bakes that fill the room with smells of citrus , cinnamon and spice .
So , as my first bake of December , I chose something that combines festive flavours , but also something my mother used to make for my birthday every year , when I was a little girl .

My scales gave up , so I had to measure everything in cups .The cake came out perfect 👌

P.S. Later on hubby is making me my most favourite dish of his , chilli con carne , and I hope he will be willing to let me have the recipe so that I can share with you on my next post .

  1. Recipe : Peel and deseed 5 large apples ( any variety you prefer ) , though I used gala apples which tend to be medium in size , so I used 8 of them . Mix them with 1tbsp x cinammon, 1/4 tsp ground cloves , 1/4 cup granulated sugar, 1tsp vanilla extract and 1 cup of roughly chopped walnuts .
    In a different bowl mix 180ml olive oil , 80ml orange juice ,2 and 1/4 cups of granulated sugar and 4x eggs , until the sugar dissolves and everything is well combined.
    In a third bowl , mix 3 and 1/4 cups of plain flour, 1x tbsp baking powder and 1 x tsp salt .
    Pour the flour mix into the egg mix and stir until all the ingredients are combined . In a greased and floured baking tin , pour 1/3 of the cake batter, top with half the apples , followed by another 1/3 of the batter , the rest the apples and finally the remainder of the batter . Bang the tin on the counter a couple of times to allow the batter to go in all the nooks and crannies. Bake in a preheated over of 180°C /fan , for 70 minutes . Let it cool down and sprinkle with icing sugar .
