… when it came to dessert time ,as a serious chocolate addict , I can assure you it was not missed .
Instead ,it was replaced by the natural sweetness of apples , a caramel blanket of sugar and cinnamon and the full bodied crunchiness of hazelnuts.
Very simple to make , I used 6 gala apples and drilled a hole in the middle of each of them , to core them but still keep their shape. Placed them in a baking dish and stuffed the holes with dark brown sugar . Filled the dish with enough water to cover just below half of the apples’ height. Covered with foil and cooked at 200°C fan for 45 minutes. Then turned the apples upside down and cooked uncovered for a further 30 minutes. When done , transferred apples onto a serving plate and poured the liquid left in the baking dish ,into a saucepan . Added 2 tbsps of butter and 2 tsps of ground cinnamon and cooked for about 15 minutes , until the sauce reduced by half. Poured the sauce over the apples and topped with nuts . I used chopped hazelnuts , but other great toppings would be almonds or pecans mixed with raisins or even crumbled digestive biscuits .
Not much left to say really , just park a spoonful of vanilla ice cream next to your apple and dig in …
