Beef Broth with Root Vegetables and Orzo…
…I initially aimed for Irish stew, but can I really call it that when I do not use the traditional mutton or lamb ? Also I have added a couple more veg than just potatoes and I served it with some orzo pasta , cause I liked the texture and did not want it too soupy .
Serves 4 :
Dice and season 800gr of braising beef steak and ,in batches ,brown all sides in a pan with a bit of olive oil and a knob of butter. Remove from pan and leave to one side .
In the same pan sauté 2x onions for about 5 minutes and then return the meat into the pan , as well as 2x sliced leeks . Pour in 1litre water with a beef stock cube and bring to a boil. Lower the heat and simmer for an hour .
Add 2 x large potatoes , 2x carrots very thickly sliced, half a swede or a couple of parsnips , diced , and continue cooking for another hour .
Adjust seasoning .
If you wish to add the orzo , just cook it in a separate pan , drain it and stir in a knob of butter . Season well . If you are not using the orzo , stir in a couple of tbsp of butter in the soup once it has finished cooking .
To serve ,ladle the broth in bowls , then add some orzo and sprinkle with chopped fresh thyme leaves.
Mmmmmm… Warmingly satisfying !
