Braised Beef with Peas and Potatoes …
…1st of September ! For me this is the month of new beginnings and resolutions rather than New Year’s . You feel refreshed after the summer break and feel ready for good changes in your life .
I also love the change in weather , when you still enjoy sunny days , although crispier , and gets me craving and excited for warm , comforting food . So ,to welcome September and the official start of autumn , I made this stew , that I have loved since childhood and that I have been trying to perfect for my family . The secret … take your time and as my aunty Kiki (an amazing cook) always used to say, cook with love and you will be able to taste it on your plate …

Recipe for 4 servings
Ingredients: 100 gr. olive oil •1 kg. braising steak ,cut into medium pieces • 1 large onion, finely chopped• 2 large carrots, cut into small squares • 400 gr. potatoes, peeled and cut in wedges • 2 cloves of garlic, finely chopped • 100 ml red wine • 1 can of chopped tomatoes • 500 ml chicken broth • 10 gr. fresh thyme, chopped • 200 gr. frozen peas • salt, pepper , sugar .
Salt the meat . Heat a saucepan over high heat, add half the olive oil and brown the beef, on all sides .Keep it aside and discard the fat from the pot. Put the rest of the olive oil in the pot and sauté the onions until soft ,then add the carrots and garlic and sauté until fragrant. Add the meat, simmer with the wine, add the tomatoes, the broth and the thyme, bring to a boil and lower the heat. Salt and add sugar, if necessary. Cover and simmer, until the meat is tender, for about 2 hours. In the half hour of cooking the meat, add the potatoes and frozen peas. Season to taste , sprinkle a bit of dill and serve .
