I have a major thing about the combination of dried fruit and fish . The sweetness in the sweet currant salsa cuts through the saltiness of the salmon beautifully .
Served on fluffy , herby, garlicky potato mash , also suggested in the book as a great side , though to be honest if somebody gave me 10 kilos of the stuff , I would just eat it from morning to night and never get tired of it !! 🙊
