…there are hundreds of recipes for falafel out there and I must have tried over half of them! And my advice would be to take certain elements from each of them , that work for you , to make your own perfect mix .
So , even though I do believe my current recipe will eventually get tweaked again , it is one that the family enjoys .
In a food processor I mix drained canned chickpeas, onion, garlic , fresh coriander , green chillies (deseeded), ground coriander , ground cumin, salt and pepper . After it is whizzed for a bit I add a little bit of water to make the mix smoother and then I start adding flour up to the stage where the mix is still loose but has a sticky consistency and can hold its shape when moulded into balls or patties . I gently roll them into sesame seeds and shallow-fry them in a bit of olive oil on low to medium heat , until they turn golden and delicious . To serve , use lots of fresh salad (the crunchier the better) , some lemon juice or vinegar , plain or minty yoghurt , wrapped in pitta , flatbread , tortillas… you name it , just make it yours 😊
