…’giant’ beans baked in tomato sauce. This is a dish popular in Kastoria , a picturesque city situated around lake Orestiada , in northwestern Greece. Kastoria has the perfect climate to cultivate this variety called elephant bean, and it is both a PGI ( protected geographical indication) and POD (protected designation of origin) product.
I cannot source elephant beans where I am , so I use butter beans that although smaller and less meaty in comparison, they work quite well.
My go-to recipe is the one from the Cucina Caruso blog (https://cucinacaruso.com) which uses grapefruit juice as a secret ingredient in the sauce .For me it makes all the difference !
