Mango Noodle Salad and Thai Fishcakes…
… I craved something light and fresh after overeating during the holidays and this was just the ticket .
Rice vermicelli noodles , mango , red onion, red pepper, chopped mint and coriander flavoured with a bit of olive oil , fish sauce, soy sauce , chilli oil and lime juice . Finally sprinkled with some chopped cashew nuts .
I had made the fishcakes as a snack the day before , but had lots left over . A simple mix of 700gr x cod fillets, 2x tbsp Thai red curry paste ,2 x tsp sugar, 2 eggs yolks, 1x cup chopped french beans , a couple of handfuls of chopped basil and the zest of 1 lemon, grated . Mix well , shape into patties and cook in vegetable oil .
