Such an quick, easy and comforting dish to make , that is also super good for you. I did not have tamarind paste , as I am having real trouble finding some at the moment , so I just mixed the same amount of rice vinegar and brown sugar in a bowl , and used the mix as a substitute. Also, I think I rolled out the dough too thinly , so the pittas did not end up as pillowy as they should , but the za’atar rub can even give flavour to a piece of cardboard , soooo delicious !!! The finishing touch of raw spring onions and dill sprinkled on top made the soup smell of freshness and summer !!!!
