Saying goodbye and good riddance to 2020 by baking a Vasilopita cake . It is your standard vanilla sponge cake but Greek tradition makes it a bit special. A coin is hidden in the batter and each piece cut is named after a member of the family . Whoever owns the piece with the buried coin, will have good luck all year round . This year I will make sure an extra piece is cut to the name of hope and health and resilience.
Also , back home, pomegranates are a good luck symbol ,so I ‘showered’ the cake with it , for extra measure.
And of course I had to place it next to my birthday/ Christmas loot , because cooking has kept me busy ,creative and sane these last months . Thank you to my family and friends for indulging me in my passion .
