Spanish Tortilla with Padrón Peppers…
… first time I tasted the tortilla was when I was a university student .
Back then I was too busy going to ridiculously cheap student nights out and my only relationship to food was getting a greasy ( but oh so good! ) kebab on the way home . It was happening so often that the guys at the kebab shop knew mine and my friends’ exact order and would start preparing it as soon as they saw us walking through the door !!
Two out of my six housemates , Eva ( Greek with an adopted broad Mancunian accent )and Carol ( Spanish with a Liverpudlian accent she picked up after she lived there for a couple of years) loved exchanging recipes and experimenting with food , and they would occasionally share incredible feasts with the rest of us .
Even up to this day, Carol’s tortilla is the best I have ever had and took me a while to replicate the flavour , the shape, even the memory if you like .
